How Do You Choose Good Olive Oil?
You can gauge quality just by looking at the name and labeling. Check these 6 things when selecting a product!
01
Single Origin Labeling
Products that clearly state the country of production down to the specific region are best.
02
Extra Virgin
Check the Extra Virgin grade. Products labeled "Pure" or "Light" instead of "Extra Virgin" undergo nutrient loss during refining.
03
Acidity 0.8% or Lower
International standard determining Extra Virgin grade; lower numbers mean higher quality.
04
Polyphenol Content
Important plant nutrient indicator evaluating olive oil's freshness and quality.
05
Light-Blocking Glass Bottle Packaging
Protects oil freshness from light, heat, and oxygen, essential for maintaining quality.
06
Pungent Throat Feeling
A peppery kick in the back of the throat is evidence of abundant polyphenols.

Acidity: 0.8% or lower
Extra Virgin
Extracted mechanically without heat or chemical treatment. Ideal for raw consumption or low-heat cooking.
Acidity: 0.8%–2.0%
Virgin
Likewise mechanically extracted, but with slightly higher acidity and a mild flavor profile.
Blend of refined olive oil

Pure (Pure / RBD)
A grade created by blending refined olive oil with virgin oil. It has a neutral flavor, but almost no antioxidants remain.
Solvent extraction
Pomace
Extracted using chemical solvents to retrieve the remaining oil content from the olive pomace left behind after pressing.
* 'Premium Extra Virgin' is a commercial term commonly used in the market,
not an official regulatory grade name.
POINT 01
Acidity of Premium Extra Virgin Grade
The acidity of olive oil is an indicator that represents
the free fatty acid content decomposed in the oil.
Olive oil with an acidity level of 0.2% or lower is produced under strict control throughout the
entire process, from harvesting to pressing.

Produced in
Sierra de Segura,
900m Above Sea Level
We use only olives from Jaén - the olive land chosen since the Roman Empire, specifically from the mountainous region of the Segura mountain range.
* Spain produces about 40% of the world's olive oil, with Jaén and the Sierra de Segura mountain range at its core.
Land Chosen by the Roman Empire
Jaén supplied olive oil to Rome (2,000 km away) starting from the Roman era. It is a land with a long history of cultivation and high average olive tree age.
Spain's Largest Protected
Nature Reserve
Sierra de Segura is a P.D.O. certified region and Spain's largest natural reserve. Situated at an average elevation of 900m with ample rainfall and mild temperatures, it yields superior olive quality.
Hand-Harvested by Human Hands
Located on mountain slopes unreachable by vehicles, farmers personally ascend and harvest using hand beaters, a process requiring far more care and effort.
Clearly distinguished from ultra-high-density cultivation methods, where 2–3-year-old young trees are densely planted on flatlands and mass-harvested using heavy machinery.
POINT 04
Product Certified with P.D.O. (Protected Designation of Origin)
Uses only olives harvested from the Sierra de Segura
region in Spain.
What is P.D.O.?
P.D.O. stands for Protected Designation of Origin.
It is a system guaranteeing that a product is produced, processed, and prepared within a specific region, fulfilling traditional local methods and strict quality standards.
Single Origin
Harvested exclusively from a single region: Sierra de Segura
Standard Compliance
Meets the traditional methods and quality standards of the region
Manual Harvesting
Carefully selective harvesting of olives in their optimal condition
Guaranteed Authenticity
Official certification obtained from the P.D.O. committee
Atomy's Promise
Atomy Extra Virgin Olive Oil sells exclusively products certified as P.D.O. Sierra de Segura by the P.D.O. committee.
Unique Serial Number Assigned to Every Bottle
(Management method exclusive to P.D.O. certified products)
P.D.O.-certified Atomy Extra Virgin Olive Oil receives a unique serial number assigned to each individual bottle.
Even if bottles share the same manufacturing date and expiration date, they are managed and classified using distinct numbers per bottle.

POINT 05
The Best Partner: Oil Produced by Spain's Grupo Jaencoop
Grupo Jaencoop is a large agricultural cooperative located in Jaén, Spain - the world's largest olive-growing region. It represents the industry in scale, production volume, and reputation, serving as a strong partner for Atomy Europe.
It takes full responsibility for producing Atomy Extra Virgin Olive Oil, from raw material cultivation to bottling.

Cultivated in a Way That Preserves Both Tradition and Innovation
Jaencoop adds innovation for quality and sustainability on top of hundreds of years of olive cultivation tradition.
It emphasizes eco-friendly cultivation and efficient resource use, raising quality and consistency through strict standards.
Fruit Harvested After
a Long Wait
Olive trees can live for over 1,000 years,
and harvesting only begins 10 years after planting.
Sierra de Cazorla, Spain's largest nature reserve, is a high-altitude area at 900 meters above sea level with large daily temperature variations, where olive trees rich in polyphenols and deep flavor grow.

Storage & Bottling
Storage
Stored immediately upon extraction in stainless steel tanks blocked from light, air, and heat to maintain peak freshness.
Bottling
Bottled into light-blocking glass bottles using automated equipment that minimizes air exposure.
* Content summarized into 4 main stages based on the detailed process flow provided by Jaencoop (Olive Oil Production Flowchart).
Preserving Flavor and Nutrition with Cold Extraction at 27°C or Lower
Protecting flavor and nutrients by minimizing oxygen exposure through faster extraction.
Cold Extraction
Placing crushed olive paste into a centrifuge for rapid cold extraction at temperatures of 27°C or lower.
A method with faster extraction time and lower nutrient loss compared to cold pressing.
Minimizing Oxygen Exposure via Faster Extraction
Time control is vital because manufacturing must minimize oxygen exposure to preserve quality.
Cold extraction is preferred over cold pressing specifically because it enables faster processing.

Frequently Asked Questions
Here are answers to the questions members ask most frequently.
Can I take it directly on an empty stomach?
High-quality extra virgin olive oil can be consumed as-is on an empty stomach without cooking. It is a great way to enjoy the oil's intrinsic aroma and flavor directly.
Why isn't the acidity level printed on the product label?
According to International Olive Council (IOC) guidelines, labeling acidity on individual bottles requires printing three separate values: acidity, peroxide value, and K-value (UV absorbance). Because these values fluctuate depending on harvest time, production date, and packaging date, they are provided via test certificate reports instead.
Is the polyphenol content of Atomy Extra Virgin Olive Oil considered high?
Yes. Atomy Extra Virgin Olive Oil is a high-polyphenol olive oil containing 810 mg/kg of polyphenols. In Europe, health claims related to polyphenols are permitted on products when levels reach at least 250 mg/kg (EU Regulation No 432/2012). Atomy's level of 810 mg/kg is approximately 3.2 times this threshold, representing a competitive, top-tier polyphenol content even among premium extra virgin olive oils.
How should I store it?
Store at room temperature in a cool place away from sunlight to preserve freshness for a long time. Note that oil may solidify if refrigerated or exposed to cold winter temperatures; if solidified, leave it at warm room temperature for a day or two to return to liquid form. The product quality remains entirely unaffected, so you can consume it with confidence.
Can olive oil be heated during cooking?
Olive oil has a smoke point of approximately 190–210°C. You can safely use it for most hot cooking applications without worrying about nutrient destruction, including stir-frying or light frying.
Does a bitter taste mean the quality is low?
No. A peppery, spicy, or bitter taste is caused by natural polyphenol components (antioxidants) characteristic of fresh, high-quality extra virgin olive oil. It is not spoiled, so you can enjoy it with confidence.
